Lockdown Lunch for Hungry Tummies
Feel like the days are going by with constant food prep and loading / unpacking / reloading of the dishwasher? Well, bring on the easy meals. Here’s a recipe that used to fill my tummy at high school tuck shop when I was going through a growth spurt. We would smell those pizza rolls from a distance – bubbling cheese and the Italian mixed herb aroma wafting down the hallway. Irresistible! Especially with our cooler weather, this will warm any tummy. SO easy. And perfect to scale up for a crowd pleaser.

INGREDIENTS:
- Hamburger Rolls
- Tin of tomato & onion mix
- Grated cheese
- Mixed Herbs
- Salt & Pepper Mix
METHOD:
- Turn your oven grill on to let it heat up while you prep. I know this may be obvious to some, but here are the settings you need – top grill on (RHS), grill setting selected (centre), and oven temperature setting selected (LHS- I usually put it around 200 to ensure the grill element stays on, but be careful this does result in a really hot grill element and everything will cook super fast! Perhaps 180 is safer as you’ll see…)

2. Cut hamburger rolls in half and place them cut side up on a piece of foil on a baking tray. Put them under the grill for literally 1-2 minutes and STAY CLOSE BY to make sure they don’t burn. You just want to crisp them up to hold the tomato sauce and not go soggy. As you can see in the pic, mine were a bit overdone – saved by the bell timer and a quick scraping off of the black stuff. Golden brown is the aim!

3. Warm your tomato and onion mix in the microwave for a minute and spread it on to the rolls. Note that I used a blended roast veg & tomato pasta sauce for these – you can use any tasty tomato based sauce (just make sure it’s thick enough not to sink into the roll, and if it’s too tart, add a teaspoon or two of sugar.)

4. Add the grated cheese. I used grated cheese from my freezer. Definitely easier to spread it around if it’s freshly grated!

5. Top with a salt & pepper mix, and a good lashing of mixed herbs. They’re delicious as is, but if you want to spice it up a little, add a topping – like salami pieces.

6. Put the pizza rolls in the oven to cook for 1-2 minutes (again STAY CLOSE BY) until cheese is bubbling down the sides of the rolls. Serve and enjoy. Yummy!
